CHEESY ITALIAN MINI MEATLOAF






Fast and easy is my favorite way to cook on a weeknight and this recipe is just that.  Add it together with Black Pepper Sage Roasted Green Beans and a salad and you have a crowd-pleasing dinner with minimal effort!

TOTAL TIME: about 35 minutes from starting to eating.
MAKES: about 1 dozen.

You will need:

1 lb. ground beef
1 egg
1/4 cup crushed crackers, panko, or oatmeal (anything that soaks up moisture will do)
1 cup spaghetti sauce of any kind
1/4 cup cheese (shredded or cubed is fine)
Italian seasoning
Salt and Pepper to taste
mushrooms, onions, green peppers, garlic - optional

Parchment Paper cupcake liners (to learn how to make your own, go here)
or regular muffin liners
Muffin Tin




How-To:

Mix the beef and the egg in a bowl.  Add the spaghetti sauce (save a little bit back, 2 T. or so), spices, salt and pepper, crackers, panko, or oatmeal, and your veggies (if you want them).  Mix them all up together. 






Put parchment paper or liners in your muffin tin and dollop some mixture into each cup.


Stuff a little cheese into each meat muffin and cover the cheese with a little more of the meat mixture.




Top with a little bit of spaghetti sauce and pop them into a 350' oven.



Bake for 25 minutes, or until cooked through.

NOTE: I like to make extra (just double the batch) and then freeze them.  They make a really easy lunch or supper, just pop them in the microwave for a few minutes and you have a meal!
