LEMON SAGE ROASTED GREEN BEENS


Sounds strange, I know, but they are pretty tasty.  I would recommend using fresh green beans so that they have a better texture, but frozen is fine, too.

YOU WILL NEED:

3/4 cup green beans per serving
olive oil
freshly cracked black pepper
kosher salt
fresh or dried sage
Lemon juice or zest or both

HOW-TO:

Spread Parchment Paper on a baking sheet.  Spread green beans on baking sheet.  Drizzle with some olive oil and sprinkle with salt, pepper, lemon zest (or juice) and a few pinches of sage.  Bake at 350 for 5 -10 minutes (or until slightly browned in spots).

mmm, mmm!  You can grate some fresh parmesan or pecorino cheese on top for a little kick.

Fast and easy is my favorite way to cook on a weeknight and this recipe is just that.  Add it together with Black Pepper Sage Roasted Green Beans and a salad and you have a crowd-pleasing dinner with minimal effort!

TOTAL TIME: about 35 minutes from starting to eating.
MAKES: about 1 dozen.

You will need:

1 lb. ground beef
1 egg
1/4 cup crushed crackers, panko, or oatmeal (anything that soaks up moisture will do)
1 cup spaghetti sauce of any kind
1/4 cup cheese (shredded or cubed is fine)
Italian seasoning
Salt and Pepper to taste
mushrooms, onions, green peppers, garlic - optional

or regular muffin liners
Muffin Tin
