CUT AN AVOCADO THE EASY WAY - how-to



I'm sure this has been thought of before, but I think it's a handy trick.  Just in case you have ever found yourself thinking "there must be a better way to do this" as you stand by a cutting board smushed with green goosh, trying to figure out how you're going to get the avocado smear out of your hair before turning on the faucet with your elbows, have I got a tip for you.

Okay, so I was channeling an infomercial for some $19.99 piece of crapola just now, but I promise you, this tip is great.  And it's free.  And there's no shipping and handling.


CHILI GRILLED CHICKEN TACOS IN THE BEST SHELLS EVER


These. Taco Shells. Are. Amazing.  They have an impossibly light, crispy crunch and are somehow perfectly simple.  No preservatives, just Corn, Lime, and Shortening.  Oh, heaven.  Oh, and the tacos are great, too.

They're (almost) the star of these cabbage and grilled chicken tacos.

Serves: 2
Time: 15 minutes
YOU WILL NEED:

2 boneless, skinless chicken breasts
1/2 tsp. Chili Powder
4 Taco Shells
1/8 Red Cabbage, sliced in strips
1/2 Cucumber, sliced in strips
1/2 Avocado, Cubed (the easy way to do it is here)
Sour Cream
Some Cheese
(Lime juice, cilantro, tomato optional)


A TIP FOR CLEANING EGGS - keeping backyard chickens


I'd like to say that this idea came to me out of the blue, because I'm great at thinking up clever ways to do things and I just instinctively know all about country living (believe me, even after growing up in the country, there are things you forget about!).

Unfortunately for my pride and ego, this was not the case.

Instead, this idea was born from a sink of dirty dishes and a shirt full of freshly-gathered eggs and nowhere to put them.  I had just made muffins the night before and the pan was in the sink. Then, bing! an idea hit.  Put the eggs in the muffin tin cups while washing them so that they don't roll around the sink and break.

Oh my goodness, this is a great little trick - thank you, sink full of dirty dishes.  I knew there was a reason I keep you around!

QUICK AND EASY UPDATE FOR AN OLD COUCH - before and after



This old couch was looking a bit dated and bottom heavy because of it's fancy-schmancy dust ruffle.  It looked pretty out of place with all of our mid-century modern furniture, so I decided on a risky move- rip off the dust ruffle.

10,000,256 (give or take 10,000,000) staples and the possible need for a tetanus shot later, the deed was done.  Turns out that over-the-top duster was hiding some beautiful and sleek wooden legs!  What a swell find!

Country Bumpkins

It's been so long since my last post!  I've been busy, though - The Man and I just moved out to the country, and it's been quite an adventure already!  The ups and downs and biting-the-fingernails part of selling our first house and buying our dream house is over and we're all moved in. 

Okay, so the garage is so full of boxes and moving things that we can't even park in it yet, but the last time we moved, I still had things packed in boxes by the second Christmas, so I'm calling this a win.
