CHILI GRILLED CHICKEN TACOS IN THE BEST SHELLS EVER


These. Taco Shells. Are. Amazing.  They have an impossibly light, crispy crunch and are somehow perfectly simple.  No preservatives, just Corn, Lime, and Shortening.  Oh, heaven.  Oh, and the tacos are great, too.

They're (almost) the star of these cabbage and grilled chicken tacos.

Serves: 2
Time: 15 minutes
YOU WILL NEED:

2 boneless, skinless chicken breasts
1/2 tsp. Chili Powder
4 Taco Shells
1/8 Red Cabbage, sliced in strips
1/2 Cucumber, sliced in strips
1/2 Avocado, Cubed (the easy way to do it is here)
Sour Cream
Some Cheese
(Lime juice, cilantro, tomato optional)




Sprinkle the chicken with the chili powder.



Throw it on the grill.



Meanwhile, chop some veggies.  Isn't sliced cabbage beautiful?

When your chicken is done, slice it up.



Layer your sliced chicken, sliced veggies, some sour cream, and some cheese into your taco shells and enjoy!
