5 MINUTE CHEWY PEANUT BUTTER RICE CRISPY BARS


With just four ingredients you can make some of the chewiest, gooeiest, peanut-butteriest rice crispy bars you can imagine.  It just takes about five minutes and you have an almost instant dessert for impromptu guests or treat for someone's birthday at work that you may or may not have forgotten about.  However you use them, this recipe is easy enough to have memorized or scribbled somewhere near your fridge so that you can whip up a batch whenever a craving hits.
 
Makes: 1 9x9 pan
Time: about 5 minutes
YOU WILL NEED:
4 T. butter
2 1/2 cups mini marshmallows
3 1/2 cups rice crispy cereal
3/4 cup peanut butter (crunchy or creamy - increase to 1 cup if you really love PB)
 
In a large saucepan over low heat, melt together the peanut butter and the butter.
 
Remove from heat and stir in the marshmallows until melted.  Add the crispy rice cereal and stir until all pieces are coated. 
 
Dump into a lightly buttered 9x9 pan and press in to shape.  Allow to cool.
*Note:  The gooeyness of the bars depends on how long and how hot you cook the marshmallows.  Also, for pressing the mixture into the pan, it won’t stick to your fingers if you rub a few drops of oil on your fingers and then press.
