TOASTED COCONUT RICE CRISPIE TREATS




These are oh-so-gooey and loaded with toasted coconut goodness.  Grab a good book and a cup of coffee and curl up with a couple of these and you're set.  I saw "a couple" because if you take the whole plate you'll eat the whole plate, no matter how strong your willpower.

time: 10 mins.
makes: 1 pan
YOU WILL NEED:
1 bag mini marshmallows
1/2 c. coconut oil (you can use butter, too)
1 c. shredded coconut, toasted
6 c. crisp rice cereal


In a large saucepan over medium heat, melt the coconut oil (or butter).  Add the whole bag of marshmallows and stir constantly.

Once the marshmallows melt and mix with the coconut oil (or butter) remove from the heat.

Working quickly, add all of the cereal to the mixture and stir until the cereal is coated.

Pour into greased pan, press down to remove air pockets, and allow to cool before eating them.  (good luck waiting for that...)
