EASY CHEESY CRACKERS - vegan or gluten-free


These little babies are tasty, crunchy, and cheesy.  Want to know the secret?  Nutritional yeast!  I know, it sounds weird (the Man had some issue with it, until he ate half the batch of crackers, declaring that they tasted like Cheese Nips).  It's really tasty and pretty healthy stuff.  I also added wheat bran and a dash of curry powder for some pizazz.

YOU WILL NEED:

2 cups wheat flour (or rice flour if you want it to be gluten-free!)
2 T. Wheat Bran (omit if needing gluten-free)
6 T. Nutritional Yeast 
2 T. Extra Virgin Olive Oil
1 tsp. Curry Powder
1/4 tsp freshly ground black pepper
Salt to taste
1/4 cup water




Mix all of your dry ingredients together, then add the oil and water.  Add the water slowly, if your dough is too sticky, add some flour, if it's too dry, add some water... you get the idea.



Separate your dough into two pieces.  Roll out one piece on a floured surface (or, parchment paper - the thought of scraping hard flour/water dough off of my counter tops often keeps me from baking - this stuff saves me from all that!)  Roll thinly for more crisp crackers, thicker for softer ones.

Slice into strips or cut into any shape that you'd like. Lay them on a greased or parchment paper (yay!) lined cookie sheet.



Bake at 350' until they just start to get a little golden on the edges.  The time that you bake them depends on how large, small, thick or thin that they are.

Enjoy!  These are awesome with cheese, hummus, and all sorts of dips (or, just plain, like the Man did)
